Here are a couple more that my family likes. I think they all came from here at The Kitchen Link.

Italian Tortellini Stew
Serving Size : 8

1 med onion -- chopped
2 medium zucchini -- cut in 1" cubes
2 (14-1/2 oz) can ready to serve chicken or veg broth
1 (28oz) can crunshed tomatoes -- undrained
1 (15.5 oz) can great northern beans -- drained and rinsed
2 tbl basil
1/4 teaspoon salt
1/4 teaspoon pepper
1 (8oz)pkg uncooked dry cheese filled tortellini

Combine all ingred. except tortellini in crock pot; mix well. Cover; cook on low for at least 6 hrs. When ready to serve, increase heat to high; add tortellini. Cook an additional 20 min, or until tortellini are soft.

notes: I shredded the zuchini and also 1 large carrot. I used fresh tortellini (9oz) and reduced the final cooking time to about 10 min. or till done. I also had to cut this recipe in half because my crock pot wouldn't hold it all.

Sour Cream Chili Bake

1 pound Ground beef
1 can Pinto beans, drained (15 oz)
1 can Enchilada sauce (10 oz)
1 can Tomato sauce (8 oz)
1 cup Shredded cheddar or american cheese
1 tablespoon minced onion1 cup Water
4 cups Corn chips
1 cup Sour cream
1/2 cup Shredded Cheddar or American cheese

Brown ground beef; drain. Transfer meat to crock pot.
Stir in beans, enchilada sauce, tomato sauce, 1 cup of
cheese, onion and 1 cup of water.
Reserve 1 cup of corn chips; crush the remaining chips
and add to the meat mixture. Cover and cook on low
heat for 8 to 10 hours. To serve, top with sour cream,
remaining cheese, and reserved corn chips.

Steak with Vegetable Gravy

Serving Size : 6

3/4 cup carrot -- finely chopped
3/4 cup onion -- finely chopped
1/2 cup celery -- finely chopped
1/4 cup green pepper -- finely chopped
2 lb beef round steak -- cut 3/4' THICK
1/2 CUP catsup
1 tbl vinegar
2 tbl flour

In crock pot, place carrot, onion, celery, and green pepper. Trim excess fat from steak; cut into 6 equal pieces. Place meat on top of veg. Sprinkle with salt and pepper. Combine catsup, vinegar, and 1/3 cup water; pour over meat. Cover and cook on low setting for 8-10 hrs. Remove meat. Skim excess fat from cooking liquid; pour mixture into a saucepan. Return meat to cooker. Blend 1/2 cup cold water slowly into the flour. Stir into veg. mixture. Cook and stir till thickened and bubbly. Place meat on platter. Spoon some gravy over; pass remaining gravy.
