Glad you liked the lemon pie. Sorry about the thickening, but sometimes the humidity does matter, or even the size of the eggs. We love the freshly squezed lemon juice, and the vinegar adds some zip. The filling is also good between while cake layers, and then frost with whipped cream mixed with more of the lemon filling. One of our favorites - especially made the day before so it gets good and soggy!
