MY HUSBAND DID THIS AND WE HAD A LOT OF LEFTOVER TURKEY. ONE THING I DID WHICH WORKED OUT QUITE WELL IS TO ADD IT TO SOME CREME OF LEEK SOUP. NOW BELIEVE IT OR NOT, SUMMER HEAT AND ALL...IT WAS QUITE GOOD AND SHOULD GET RID OF ABOUT 1 CP . OF TURKEY DICED.
CREAM OF LEEK SOUP
4 CPS. POTATOES, PEELED/CHOPPED 3 CPS. LEEKS SLICED 1 CAN (15 OZ.) CHICKEN STOCK 6 CANS WATER 1 TBSP. SALT ½ CP. OR MORE HEAVY CREAM PIECES OF FRIED BACON OR HAM (OPTIONAL) SEASONINGS MAY ENCLUDE DILL WEED, SPIKE, LEMON PEPPER, MAGGI SEASONING SAUCE...1/2 TSP. BASIL....WHATEVER. IN DUTCH OVEN, SIMMER POT. & LEEK, SALT TILL VERY TENDER (50 MIN.). PUREE IN BLENDER, SEASON AND STIR IN CREAM. IF YOU OVER SEASON, JUST ADD MORE CREAM. I USUALLY TAKE ONE EXTRA POTATO PEELED AND DICED AND BOIL IT IN A POT ALONE JUST TILL IT IS DONE CAUSE WE LIKE A FEW LUMPS OF POTATO IN OUR SOUP. THIS IS A KILLER RECIPE. ALSO HAVE YOU EVER THOUGHT ABOUT CANNING IT??? SAY FOR LATER ADDITIONS IN SOUPS OR STEW? ALSO FREEZE IT IN FREEZER BAGS FOR A LATER IDEA. GET CREATIVE....ALL OF LIFE IS AN EXPERIMENT...IF NOT THEN WE WOULD HAVE BEEN GIVEN A SET OF INSTRUCTIONS WHEN WE WERE BORN AS TO HOW TO PROCEED!! HA HA! SERIOUSLY THOUGH....HERE'S ANOTHER RECIPE THAT YOU COULD ADD CUBED TURKEY TO..I'D SAY ABOUT 1/2 CP. SO AS NOT TO RUIN THE DELICATE FLAVORINGS OF THE OTHER INGREDIENTS.
PECAN WILD RICE PILAF WHEAT AND WILD RICE PILAF WITH PECANS
4 CPS. CHICKEN BROTH 1 CP. WILD RICE, RINSED WELL 1 3/4 CPS WHEAT PILAF 1 CP. PECAN HALVES 1 CP. DRIED CURRANTS 1 BUNCH SCALLIONS, THINLY SLICED ½ CP. ITALIAN PARSLEY, CHOPPED ½ CP. FRESH MINT LEAVES, CHOPPED GRATED ZEST (PEEL) OF 2 ORANGES 2 TBSP. OLIVE OIL 1 TBSP. ORANGE JUICE FRESHLY GROUND BLACK PEPPER IN MED. SAUCEPAN, BRING BROTH TO A BOIL. ADD WILD RICE TO BOILING BROTH. BRING BACK TO BOIL, REDUCE HEAT TO MED-LO. AND COOK, COVERED FOR 50 MIN OR TILL RICE IS TENDER. DO NOT OVERCOOK. REMOVE TO A LG. BOWL. WHILE RICE IS COOKING, IN ANOTHER SAUCEPAN BRING 2 1/4 CPS WATER TO A BOIL. STIR IN PILAF, COVER AND BRING BACK TO BOIL. REDUCE HEAT TO LOW AND SIMMER 15 MIN. OR TILL PILAF IS TENDER. REMOVE FROM HEAT, LET REST 15 MIN., ADD TO COOKED WILD RICE. IN MICROWAVE STEAM SCALLION SLICES ½ MIN OR TILL SOFT. ADD REMAINING INGREDIENTS AND TOSS WELL. SERVE AT ROOM TEMP. SERVES 8 OR MORE.
