Karen, here is three recipes for popcorn that I have made for years (especially the caramel)
Sister Mabel's Super Caramel Corn
2 cups light brown sugar 1/2 cup light corn syrup 1 cup butter or margarine 1/4 tsp. cream of tartar 1 tsp. salt 1 tsp. baking soda 6 quarts popped corn
Place popped corn in a large buttered or greased( Pam) bowl. Set aside. Preheat oven to 200*F. In a large saucepot, combine brown sugar, corn syrup,butter,cream of tartar and salt. Boil rapidly on medium-high heat, stirring constantly, until mixture reaches 260* F. on a candy thermometer. Remove from heat. Stir in baking soda, stirring to mix thoroughl(mixture will foam up, keep stirring ). Immediately pour mixture over popped corn and stir to coat corn well. Place coated corn in a large buttered roasting pan or sheetcake pan. Bake caramel corn 1 hour in a 200*F. oven , stirring every 15 minutes. Keep caramel corn in a tightly covered container. If it becomes sticky and soft, place in oven again for a few minutes.
Nacho Popcorn
1 tsp. paprika 1/2 tsp. crushed red pepper (flakes) 1/2 tsp. ground cumin 1/4 cup margarine or butter,melted 10 cups warm popped corn 1/3 cup grated parmesan cheese
In a small bowl, stir together the paprika, red pepper, cumin & butter. Gently toss butter mixture with the popped corn, coating evenly. Sprinkle the parmesan cheese over seasoned corn, tossing to coat evenly. Careful....this is spicy but good!! Makes 10 cups
Garlic and Parmesan Popcorn
3/4 cup corn kernels, popped 1/4 cup grated parmesan cheese 1-2 tsp. garlic powder 1/2-1 tsp. cayenne pepper
Toss popped corn with the garlic,parmesan cheese and cayenne. Add salt if desired.
