Chicken Tortellini 1 1/4 lb skinless, boned chicken, slivered 2 Tbsp Oil 1 Med. Onion, chopped 1 can tomatoes, cut up ( I used fresh ) 1/4 cup celery chopped 1 cup chicken broth 1/2 tsp salt 1/2 tsp garlic powder dash of pepper 1 pkg (8oz) tortellini filled with cheese, cooked Parmesan Cheese
Saute chicken slivers, onion and celery in hot oil in large skillet, about 5 minutes, stirring often. Add broth, tomatoes and seasonings. Simmer covered about 10 minutes. Add cooked tortellini and stir until heated through. Remove from heat and serve immediately. Serve with additional Parmesan cheese. I served it with a salad and french garlic bread WONDERFUL!! Quick and COOL !!
