Dear Fleigh, Here's a great chicken dish that's really fast and tasty! Start marinating in the morning even though it only says 15 minutes. Low fat too!!
Tandoori Chicken:
1-1 1/4 lb boneless, skinless chicken breast halves 1/2 cup plain yogurt 1 Tablespoon lemon juice 2 tsp peeled and grated fresh gingerroot 1 clove garlic minced 1/2 tsp paprika 1/2 tsp ground cumin 1/2 tsp ground coriander 1/2 tsp salt 2 Tablespoons chopped fresh cilantro
Mix the yogurt and the next 7 ingredients together. Marinate chicken in a 13x9 pan with the yogurt mixture 15 minutes. Broil 4 or 5 inches from heat about 5 minutes per side till done. Garnish with cilantro. Serve with rice (do ahead and reheat)and peas. Serves about 4.
Hint: I double the amount of marinade so there's some to spoon onto the meat. |
