We have a local "Apple Orchard" and I have been anticipating the opening date. (Usually the last week in August). I am now searching for as many apple recipes as possible (appetizers, breads, main dishes, dessert, etc.) Here is a couple of recipes I stumbled across last year. Any recipes given would be greatly appreciated.

Irish Apple Cake:
1 c. vegetable oil (or applesauce)
2 c. sugar
2 eggs
1 tsp. vanilla
2 1/2 c. all purpose flour
1 tsp. salt
2 tsp. baking powder
1 tsp. cinnamon
4 c. peeled, diced apples
1 c. chopped walnuts
1 pkg. butterscotch chips (or less)

Cream oil, sugar, eggs, and vanilla. Combine flour, salt, baking powder, and cinnamon. Add to creamed mixture and mix well. Add apples. Fold in nuts. Pour into greased and floured 9x13 pan. Sprinkle butterscotch chips evenly over top; DO NOT MIX. Bake at 350 degrees for 50-60 minutes or til tests done


Autumn Cheesecake: (this is my favorite-came from Philidelphia Cream Cheese cookbook)

1 c. graham cracker crumbs
3 Tbsp. sugar
1/2 tsp. cinnamon
1/4 c. margarine melted

2-8oz. pkgs. cream cheese, softened
1/2 c. sugar
2 eggs
1/2 tsp. vanilla

4 c. thin peeled apple slices
1/3 c. sugar
1/2 tsp. cinnamon
1/4 c. chopped pecans (I use walnuts)

Combine crumbs, sugar, cinnamon, and margarine. Press into bottom of 9 inch springform pan. Bake 350 degrees for 10 minutes. Combine cream cheese and sugar, mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, beating well after each addition. Blend in vanilla; pour over crust. Toss apples with combined sugar and cinnamon. Spoon apple mixture over top of cream cheese mixture; sprinkle with nuts. Bake at 350 degrees for 1 hour and 10 minutes, or til looks done. Loosen cake from rim of pan; cool before removing rim of pan. Chill.
