Baked Potato Salad

3 lbs med. red potatoes
2 cups shredded Cheddar cheese
1 (8oz) bottle Ranch-style dressing
1 tbl mustard
6 green onions -- chopped
1 medium bell pepper -- chopped
2 slices bacon -- cooked and crumbled

Coat potatoes with cooking spray and pierce several times with a fork. Bake at 400 for 45 min. or till tender. Cool and cut into cubes. Combine 1-1/2 cups cheese, dressing, mustard, onion, and bellpepper in a large bowl. Add potatoes and toss gently. Sprinkle with bacon and remaining cheese.

Fiesta Potato Salad

6 cups cooked cubed peeled potatoes
1 1/2 cups (6oz) shredded cheddar cheese
2/3 cup black beans -- rinsed and drained
2/3 cup chopped sweet red pepper
1/2 cup thinly sliced celery
1/3 cup thinly sliced green onions
1 to 2 tbl minced fresh cilantro or parsley
3/4 cup ranch salad dressing
1/2 cup chunky salsa
1/2 teaspoon salt
lettuce leaves -- optional

In a large bowl, combine the potatoes, cheese, beans, red pepper, celery, onions, and cilantro. In a small bowl, combine salad dressing, salsa, and salt; pour over potato mixture and toss to coat. Cover and refrigerate for at least 1 hr. Serve in a lettuce-lined bowl, if desired.

Calico Beans

1/2 pound bacon -- cut in 1" lengths
1 medium onion -- chopped
1/2 cup firmly packed brown sugar
1/4 cup catsup
1 tablespoon Worcestershire sauce
1 can (15-1/2oz) lima beans -- drained
1 can (14-1/2oz) green beans -- drained
1 can (16oz) pork and beans -- drained
1 can (15-1/2oz) kidney beans -- rinsed and drained

Cook bacon in large skillet until crisp. Remove bacon, reserving 2 tbl. drippings in skillet. Saute onion in skillet until crisp-tender. Add brown sugar, catsup, Worcestershire sauce, limas, green beans, pork and beans, and kidney beans, mixing well. Spoon into a 13x9x2" baking dish. Bake, uncovered, at 350 degrees 20 min. or till heated through. Sprinkle with cooked bacon.

Marinated Vegetables

1/4 cup white wine vinegar
2 tablespoons veg. oil
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon chopped fresh dill
1/4 teaspoon pepper
1 large cucumber -- thinly sliced
1 to 2 purple onions -- thinly sliced
2 large ripe tomatoes -- sliced

Combine first 6 ingred. Arrange cucumber, onion, and tomato on a platter; drizzle with vinegar mixture. Cover and chill at least 30 min. before serving.
