Base for Cream Pies
makes 1 9" pie
Mix in a heavy sauce pan: 3/4 cup sugar 2 T flour Dash of salt
Add: 1 1/4 cup whole milk 1 t vanilla flavoring 2 egg yolks 1/2 stick margarine
Cook over medium high heat, stirring constantly, until mixture comes to a good rolling boil.
Remove from the heat. Add 1 cup coconut. (For a chocolate pie add 5T cocoa; you can also use this base for pineapple, banana,etc.)It's very versatile.
Mix.
Pour in a baked pie shell.
Top with meringue if desired. My family does not like meringue so unless I'm making for company or to take somewhere I don't use it.
