This Recipe doesn't call for bacon and potato chunks, but it would be simple to include them. I suggest cooking 1/2 lb. diced bacon then use the drippings instead of shortening when browning the meat. For the potatos, just add 2-3 C potato chunks.

Pounded Steak a la Morrelli
-from Aunt Bee's Mayberry Cookbook

1 1/2 pounds round steak
1/4 cup all-pupose flour
1 teaspoon salt
2 tablespoons shortening
1 16 oz can sliced tomatoes
1/2 cup finely chopped celery
1/2 cup finely chopped carrots
1/2 teaspoon Worcestershire sauce

Cut the steak into 6 portions. Combine the flour and salt, and sprinkle 2 tablespoons of the mixture over the steak. Pound the mixture into both sides of the steak. In a skillet heat the shortening and brown the meat.
Transfer the meat to a 12x7 1/2-in. baking dish. Blend the remaining flour mixture into the pan drippings. Stir in the remaining ingredients, and stir constantly until thick and bubbly. Pour the mixture over the meat, and cover the dish. Bake in a 350 oven for about 1 hour and 20 minutes, or until the meat is tender.
