Recipe: Festive Rice Squares

I found this recipe in "Cooking with the Healthful Herbs" and it has almost all the ingredients you listed but is made w/ brown rice...

Festive Rice Squares

2 Tbs butter
1 Tbs olive oil
1 1/2 cups finely chopped onion
1/2 cup finely chopped red pepper
2 cups cooked long-grain brown rice
2/3 cup grated parmesan cheese
1/4 cup minced parsley
2 Tbs minced basil or 2 tsp dried basil
4 eggs, lightly beaten
2 Tbs extra grated parmesan cheese

Place butter and oil in a large frying pan over medium heat until the foam subsides. Add onions and red pepper. Sautee until the veges are soft, stirring frequently so onions don't brown. In a large bowl lightly stir rice, parmesan, parsley and basil until well mixed. Fold in the onions and peppers. Stir in the eggs. Grease a 7-by-11inchbaking dishand spread the rice mixture evenly in the pan; level the top. Sprinkle w/ extra parmesan. Bake at 350F/180C for 40 mins or until mixture is set and golden brown on top. Let cool in the pan for 10 mins before cutting into 2-inch pieces. Serve warm. Makes 24 pieces.
