Chicken pieces-skinned
3/4 dry instant potato buds
1/4 no fat or low fat parmesan cheese- grated
1 dash ea. garlic powder, paprika, dry thyme, pepper to taste.
no-egg product to dip the chicken or egg whites
(or if you want it spicy, use Pace Picante Sauce
instead)
Pre heat the oven to 350. Dip the chicken in the no-egg stuff, egg whites or Pace and roll or shake in a mixture of the dry ingredients. Spray lightly with oil so the chicken coating will brown. Bake about 1 hour. Can use this on potato wedges too for "fries"- it is a standard at our house!
This comes from a woman in Hawaii, who is a wonderful cook/caterer/teacher.

No Fuss Baked Chicken

1 frying chicken -- or parts
1/2 c. mayonnaise
1/4 c. parmesan cheese
2 Tbsp. prepared mustard
cornflake crumbs
Combine mayo, cheese and mustard. Pat dry the chicken parts, with paper towel. With pastry brush, spread mixture all over chicken pieces. Coat well with crumbs. Place on greased or foil lined baking sheet, skin side up and bake at 400 deg. for 25-45 min. depending on thickness of chicken. (wings take about 25 min.)

Deviled Chicken Legs

1 can cream of celery soup
1/3 c. finely chopped gr. onions
2 tsp. coarse grained mustard
2 tsp. worcestershire sauce
1 c. packaged seasoned bread crumbs
4 whole chicken legs -- skin removed
2 Tbsp. or more butter or marg. melted
Heat oven to 450 deg. line a jelly roll pan with foil, grease foil. Seperate thighs from drumsticks. In a med. bowl, stir undiluted soup, and seasonings. Place bread crumbs in a shallow bowl. Working with one piece at a time, roll chicken in soup, then in bread crumbs until well coated. Place in pan and drizzle with butter. Bake 50 min. or until well browned and chicken is done.
