Hi Sue,

I think your friends are referring to cooking dried beans - that takes soaking time and hours cooking. Fresh green beans just take a few minutes. I like to steam them just until fork tender and bright green - it's matter of preference. Some fresh lemon or a stalk of lemon grass in the steaming water enhances the flavor.
