I enjoyed the responses to your request for uses of Blue Cheese. I love blue cheese just about any way its fixed. My favorite way of eating it though is with pickles. As a small girl I remember going with my Dad to the deli and picking out the largest pickle stuffed with blue cheese.
Stuffed Pickles with Blue Cheese

1 jar of your favorite dill pickle(I like mine with garlic)
1/4 lb of the bluest veined cheese you can pick out. Room temp.


Drain the pickles cut off just the tip of the pickle. Using a potato peeler
scoop out the soft seeded insides of the pickles scraping the soft center
I usually let the pickle drain on a paper towel. Then stuff the softened
cheese inside of the pickle being sure to pack the cheese into the pickle. Chill the finished pickle. When chilled, slice the pickle. Serve on plate with other appetizers. The only trouble I have with this is I usually eat too manyh of them myself before they get to the table. Also I have used other cheeses to stuff the pickles. But nothing beat the blues. Don't waste the guts of the pickle or the tips throw them into a salad.
