I am doing research for a new restaurant that may be opening in the Washington, DC area. My forte is American Regional food and, to be quite honest, I don't know the difference between croquetas and polomilla. If you should have authentic recipes that you might like to share (restaurant yield size would be even better!), I'll personally cook you and a guest dinner for two when we open!
