OLD WORLD ITALIAN SAUSAGE
2 tsp. salt
1 tsp. black pepper
4 tsp. fennel seeds
4 tsp. oregano
1 tsp. garlic powder
1 tsp. red pepper
8 lbs. pork butt or pork shoulder, 1
1/2 inch cubes
Combine seasonings over meat cubes in large bowl. Toss well. Grind and stuff into casings.
OLD FASHIONED POTATO SAUSAGE
5 lbs. hamburger
1 lb. pork
10 lbs. potatoes
2 onions1/4 c. salt
1 tbsp. pepper
About 1 c. water
Grind together: Mix in: Put into casings using sausage stuffer (you'll need about 1 1/4 pounds casings). Cut each sausage into approximately 3/4 pound lengths. Simmer 15-20 minutes in water with bay leaves and peppercorns. Cool and freeze rings (makes about 20). To prepare: simmer sausage in shallow pan with 1/2 inch water until cooks through. Let water evaporate, add a pat of butter and brown lightly.
