This is something that the kids in my family LOVE. We grew up with these. It was cut out of a newspaper over 20 years ago... the recipe while basic was lost for many years until we found it in one of my mothers many cook books! What a morning that was!


David Eyre's Pancakes (I have know idea who David Eyre is but GOD LOVE HIM!!!!)

1/2 cup flour
1/2 cup milk
2 eggs lightly beaten
Pinch of Nutmeg
4 T butter
2 T 10x sugar
Juice of 1/2 lemon (I like more...)

Combine flour milk eggs and nutmeg 'til slightly lumpy. Heat cast Iron skillet in a 425 oven. Drop butter in skillet to coat. Pour in batter. Bake in oven for 15-20 minutes (til golden brown)it will "grow" up the sides of the pan and get big bubbles in the center). Remove from oven sprinkle with sugar and Lemon juice.
