I found this recipe in a cookbook called Hunt to Harbor-A Maryland Cookbook. Although the chicken is stuffed instead of on top, it sounds like what you are looking for.
6 boneless chicken breast halves, skinned salt and pepper 1/2 cup onions, chopped 1/2 cup celery, chopped 6 tbl. butter or margarine, divided 7 tbl. dry white wine, divided 12 oz. crab meat 1/2 cup herb-seasoned stuffing mix 3 tbl flour 1/2 tsp. paprika 3/4 cup milk 1 envelope Hollandaise sauce mix 1/2 cup Swiss cheese, shredded
Pound chicken to flatten. Sprinkle with salt and pepper. Saute onion and celery in 3 tbl. butter until tender. Remove from heat. Add 4 tbl. wine, crab meat, and stuffing mix, and toss. Divide mixture among the breasts. Roll up and secure with a toothpicks.
Combine flour and paprika; coat chicken. Place in 9x13" greased baking dish. Sprinkle with 3 tbl. melted butter. Bake uncovered in 375 degree oven for 1 hour. Transfer to serving dish. Blend milk with Hollandaise mix. Cook, stirring constantly until thick. Add remaining wine and cheese, stirring until cheese melts.. Pour over chicken and serve.
