hi Fred,

I accidentally found an old recipe in my mother's collection few minutes ago.
She stated this as "homemade hoisin sauce". However, I have never seen her making it so...

Homemade Hoisin Sauce

1 clove garlic
6 spring onions
2 red chillies (I suspect it's the bird's eye chillies.)
1 piece stem young ginger
1 Tbsp. light soy sauce
2 Tbsp. plum jam (I think she mat refer to the Chinese version, not too sure.)
1 tsp. ketchup (or tomato paste)
salt and ground black pepper (surprisingly, I thought she would have said "white" instead of "black pepper".)
2 Tbso. light sesame oil

Crush garlic. Trim and finely slice spring onions. Cut chillies in half, remove core and seeds and finely chop flesh. Dice ginger.

Place garlic, spring onions, chillies, ginger, soy sauce, jam, ketchup, salt pepper and sesame oil in a small pan with 2 tsp. water and simmer together to make a hot, sweet sauce.
