Hi! I'm going to give you the entire recipe, but feel free to use just the dumpling recipe, if you have a chicken paperkas recipe you like better! This is one of our favorite ways to eat chicken and came directly to me from my best friend, who's mother in law is Hungarian and a wonderful cook!
1 ontion chopped 4 tbs shortening sweet hungarian paprika (no substitutes) 10-12 pieces of chicken 2-3 pints of sour cream (I use light) salt and pepper 1 1/2 cups water
Brown onions in shortening in dutch oven on top of stove. And one layer of chicken pieces, sprinkle salt, pepper, and lots of paprika on chicken, then add another layer of chicken and do the same. Repeat until you have used all the chicken. Add enough water to cover the bottom of the pan (about a cup and a half) and simmer slowly for 2 hours or until tender. Remove chicken and add 2 pints of sour cream to drippings. If this is not the consistency of thick gravy, add a little more sour cream. Take up chicken to platter, Pour some of the gravy over chicken, cover and keep warm in the oven until dumplings are done.
Dumplings:
3 eggs beaten 3 cups flour 1 tablespoon salt 1/2 cup water 6-8 cups boiling water
Mix first four ingredients together and beat with a wooden spoon. Drop batter by teaspoonfuls into boiling salted water. Cook until dumplings rise to the top. then drain and put in gravy. Serve with chicken.
Note: dumpling batter will be almost the consistency of a dough, more than a batter. It takes patience, but I drop by about half teaspoonfuls, as we like the smaller dumplings! |
