Green Tomatoe Relish

4 qts cored, chopped green tomatoes (about 32 medium)
1 cup chopped onions (about 1 medium)
2 cups sweet green peppers (about 4 small)
1 1/2 cups sugar
1/2 cup salt
2 tbsp. mustard seed
1 tbsp. celery seed
4 cups vinegar

Sprinkle salt over vegetable, mix and let stand 3 or 4 hours. Drain throughly and press to remove free liquid. Add sugar and spices to vinegar; simmer 15 minutes. Add vegetables and bring to a boil. Pack in hot jars, adjust caps. Process 10 minutes in boiling water bath. If heat is desired, add 1 tbsp. horseradish or a pod of cayenne pepper to each jar.

If a crispy relish is desired, soak for at least 12 hours or up to 24 hours in a solution of 1 cup pickling lime to 1 gallon of water. Pour off solution, rinse vegetalbles, use an alternate method of rinsing and soaking in clear water until all lime is removed. Drain well, and follw the above directions omitting the salt step.
