Avocado and Shrimp Salad This is a tried and true dinner party and summer recipe. 3 Tablespoons olive oil 2 Tablespoons white wine vinegar 1 teaspoon Dijon mustard 1 pound shrimp, cleaned and cooked and cubed or sliced 1 cup mayonaise 2 Tablespoons chili sauce 1 large clove garlic,crushed hot pepper sauce (if desired, in this dish, I do not add it) salt and pepper 1 large ripe avocado (the California kind) juice of 1/2 lemon Whisk together first 3 ingredients. Add shrimp, toss well cover and marinate at least 1 hour. Meanwhile, whisk mayonaise,chili sauce,garlic,hot pepper sauce(if desired) and salt and pepper. Set aside. Peel, pit and cube avocado. Sprinkle with lemon juice. Drain shrimp. Add cubed avocado. Add enough mayonaisemixture to lightly coat all lightly. Cover and chill until ready to serve. Divide and serve on lettuce leaves.
