CARROT COOKIES
1 c. butter or margarine
3 eggs
1 tsp. grated lemon rind
2 tsp. baking powder
1 c. raisins, chopped
1 c. sugar
1/4 tsp. salt
1 c. grated carrots
3 c. sifted flour
1 1/2 Tbsp. lemon juice
1 c. nuts, chopped
Cream butter; add sugar, eggs, carrots, lemon rind and
juice. Sift dry ingredients. Add nuts and raisins. Add to
other mixture. Drop by teaspoon on greased cookie sheet. Bake
at 350 degrees for 10 to 15 minutes.
