BEEF STIR FRY Yield: 4 Servings 4 tsp Oil 2 Cloves garlic, minced 6 oz Lean beef strips 2 medium Onions, cut in 6 wedges each 1 Carrot, cut in julienne strips 3 cups Broccoli flowerets 3 cups Cauliflower flowerets 1/2 Red bell pepper, cut in strips 1/2 Green bell pepper, cut in strips 1 cup Bean sprouts 7 Tbsp Beef stock Juice of 1/2 lemon 3 tsp Soy sauce Heat wok over high heat. Add oil & heat. Add the garlic then the beef. Quickly fry, stirring & turning constantly, till they change color. Remove & set aside. Add onions, carrots, broccoli & cauliflower. Cook, stirring & turning constantly till just beginning to soften, 2-3 minutes. Quickly add bell pepper strips & bean sprouts. Add beef & stir fry a few seconds. Add stock, lemon juice & soy sauce & quickly stir through. Cover the wok & cook 3-5 minutess till vegetables are just tender. Serve at once with rice.
