CORN DOGS

2/3 c. cornmeal
1 c. flour
1 1/2 tsp. baking powder
1 tsp. salt
1 egg, slightly beaten
2 tsp. fat or oil
3/4 c. milk
1 lb. wieners, boiled first

Combine the dry ingredients. Combine the egg and oil with the milk. Add to the dry ingredients and mix well. Insert wooden skewers into the wieners; cover the wieners with the cornmeal mixture and fry in deep fat until golden brown. Serve with mustard or chili sauce.

CAROLINA CORN DOGS

3/4 c. self rising flour
1/4 c. self rising cornmeal
1 tbsp. sugar
1 tsp. mustard
2 tbsp. chopped onion
1 egg, beaten
1/2 c. milk
1 lb. hot dogs, boiled

Mix flour, cornmeal, sugar, mustard and onion. Combine egg and milk. Add to mixture. Boil hot dogs. Coat in mixture and fry in hot oil at 350 to 360 degrees until coating is golden and crisp.
