Sesame chicken wing appetizers
12 chicken wings 1 tablespoon saled black beans 1 tablespoon water 1 tablespoon peanut, vegetable or corn oil 2 cloves garlic, crushed 2 slices fresh ginger root, cut into very fine shreds 3 tablespoons dark soy sauce 1 1/2 tablespoons shao hsing wine, or dry sherry 1/2 teaspoon monosodium glutamate, optional 1/4 tespoon ground black pepper 1 tablespoon tablespoon sesame seeds 2 tablespoons chopped scallions, green part and all
Cut off and discard the small wing tips. Cut between and resserve the main wing bones and the second wing joint. Crush the beans and add 1 tablespoon of water. Let stand. heat the oil in a wok or skillet and add the garlic and ginger. Stir briefly and add the chicken wings. Cook, stirring, until lightly browned for about 3 minutes. Add the soy sauce and wine and cook, stirring, about 30 seconds longer. Add the soaked black beans. Cover closely and let simmer for 8-10 minutes. Uncover, turn the heat to high and continue cooking, stirring, until liquid is almost evaporated and chicken pieces are glazed with sauce. Remove from heat and add the monosodium glutamate, if desired, and pepper. toss. just before serving, toss in the sesame seeds and scallions. this dish can be made in advance and reheated. Yield: 8 or more servings.
