You can put anything you want in a breakfast burrito. I make a mixture of eggs, potatoes, cheese, bacon, and green chilis. Basically, whatever you like to eat can go in them. When I've done them for a group, I have put out different stuffings so that everyone could fix their own. For a large group or fundraiser, I partially pre-cook a mixture of eggs, cheese, potatoes (hash browns work well), and bacon or sausage. I finish cooking them in an electric frying pan as people order them. I have green chili, salsa, etc. on the side for people to add as they want. I've even made them without eggs, since my daughter doesn't like eggs. What's more important than the filling, though, is the tortilla. You need to have a good flour tortilla. You should be able to find some good ones in CA. Some inexpensive brands that I've found to be decent are Bueno and El Paso. In Los Angeles, I think I used a brand called Grandma's.
