SWEDISH PANCAKES
Ingredients~~ 4 eggs 1 small container creamed cottage cheese 1 small container sour cream ¾ cup flour 1 teaspoon vanillaMethod~~ Beat eggs until light and fluffy. Add sour cream, cottage cheese and vanilla. Mix well, then add flour. Mix again. Place on medium hot griddle. Pancakes will appear bubbly on top when ready to turn. Serves 4 people.
So light you will have to put a paperweight on them to keep on your plate.
