CORNED BEEF AND CABBAGE SOUP

If you make your corned beef and cabbage with *lots* of veggies, when the beef is gone (or even if you have some left & cut it up), you can make a great soup.

Just toss in a can of whole tomatoes, preferably in puree but any style should do. Liquid & all. Heat well. Just before serving, add sour cream to taste. The sour cream can be added after the soup has been ladeled into the bowls if you prefer.

It tastes remarkably similar to a Polish cabbage soup that my grandmother used to make. This soup is one of our favorites.....and you don't have to tell *anyone* how easy it is!
