coofee and walnut traybake
cut into 21 small pieces
coffee and waltnut go particularly well together, but you can use other nuts for this recipe if you prefer. very easy and tasty little cakes!!!8 oz (225g) soft margarine (the block one or just use "unslated butter" as i always do!) 8 oz (225g) light brown sugar 10oz (275g) self raising flour 2 t. baking powder 4 eggs 2T. milk 2 T. coffee essence 3 oz (75g) walnuts, chopped
for the icing 3 oz(75g) soft margarine 8 oz (225g) icing sugar, sifted 2 t. milk 2 t. coffee essence (or 1 t. instant coffee powder dissolved in 2 t. water) walnut halves for decoration
preheat the oven to 180C/350F/gas4 and base line a 12x9 in (30 x 23 cm) roasting tin with greased greaseproof paper.
Measure all the inhredients into a large bowl and beat well for about 2 min until well blended. Turn the mixture into the prepared tin and level the top.
Bake in the preheated oven for about 35-40 min or until the cake has shrunk from teh side of the tin and spring back when pressed in he center with your fingertips. leave to cool in the tin.
for the cicing, beat together the margarine with the icing sugar, milk and coffee essence. spread evenly over the cake using a palette knife, then decorate with walnut halves (so each little piece has one!)
