I've used this recie since 1965 and have never served it, that a copy of the recipe wasn't asked for. Hope you enjoy it too.
Chicken Pecan Salad in Cranberry Ring
1 1/2 cups sliced canned peaches 3 cups cubed cooked chicken {boiled and cooled} 1 cup diced celery 1/2 cup mayo 2 tablespoons salad oil 2 tablespoons white vinegar 1/2 teaspoon salt 1/2 cup coursely broken toasted pecans {set aside}
In bowl, combine mayo, salad oil, vinegar and salt. Pour over chicken mixture and toss together. Just before serving, stir in nuts and serve in cranberry ring. Cranberry Ring
1 cup orange juice 2 3 oz. boxes lemon jello 1 16 oz. can whole cranberry sauce
Heat one cup orange juice and one cup water until boiling. Add gelatin and stir well. Add one cup additional orange juice, stirring well. Chill until partially set. Stir in can of whole cranberry sauce. Mix well and pour into 6 1/2 ounce round mold and chill overnight.
