Date-Filled Drop Cookies #1
1 cup butter, softened 2/3 cup brown sugar 2/3 cup sugar 2 eggs 1 t. vanilla 2 cups + 2 T. flour 1 t. baking soda 1 t. salt 1 t. warm water or coffee 1 cup chopped nuts 1 cut cut-up dates
Cream butters and sugars. Add eggs and beat until light. Add vanilla and water. Gradually stir in flour mixture with soda and salt. Stir in nuts and dates. Drop by teaspoon onto ungreased cookie sheet. Bake at 350 for 10 minutes. Makes 50 cookies.

1 cup cooking oil (or soft shortening) 2 cups brown sugar, packed 2 eggs 1/2 cup sour milk 1 t. vanilla 1 t. soda 1/2 t. cinnamon 3-1/4 cup flour
Filling: 2 cups dates, cut small 3/4 cups sugar 3/4 cups water
Mix oil, brown sugar and eggs; stir in milk and vanilla. Sift dry ingredients and mix. Set aside. Mix remaining ingredients for filling, cook until thick, stirring constantly. Cool. Drop cookie mixture by teaspoons onto ungreased cookie sheet. Drop 1/2 t. filling on top of each spoonful of cookie dough.

1 t. salt 1 cup Crisco 1 t. vanilla 2 cups brown sugar 3 eggs 4 cups flour 1/2 t. soda 1/2 cup water
Filling: 1 cup chopped dates 1 cup sugar 1 cut nuts 1 cup water 2 T. flour 1/2 t. vanilla
Mix dough while your filling is cooking on a low heat. Roll dough in balls, make indent in center and place spoon of filling in center. Bake for 15 minutes at 350.

1 cup soft shortening 2 eggs 1 t. vanilla 3-1/2 cups flour 1 t. soda 2 cups brown sugar 1/2 cup water, sour milk or buttermilk 1 t. salt 1/4 t. cinnamon
Cream shortening. Add sugar and blend. Add eggs and beat. Add water and vanilla. Sift flour, salt, soda and cinnamon. Drop by teaspoon on ungreased baking sheet. On this drop 1/2 t. date filling and cover with 1/2 t. dough. Bake at 400 degrees for 10-12 minutes.
Filling: 2 cups cut dates or raisins 3/4 cup sugar 3/4 cup water Dash of salt Rind of 1 orange or 1/2 t. lemon peel 1/2 c. chopped nuts
Mix dates, sugar and water in saucepan. Cook over medium heat, stirring constantly until thickened. Add nut meats and lemon or orange and cool. This is very important to cool before using.
