EASY NAVY BEAN SOUP

Ingredients:
------------
1 lb Navy Beans
l large onion
2 small jalapeno peppers (if you're brave, otherwise omit)
1 large ham bone

Simmer in about 3 quarts of water all day in crockpot on high. (3 - 4
hours on top of stove).

Easy Baked Potato Soup

Amount Measure Ingredient -- Preparation Method

5 medium russet potatoes
6 tablespoons margarine
2/3 cup all-purpose flour
6 cups skim milk
salt and pepper to taste
1 cup sour cream (can use fat free)
1 (3oz) jar real cooked bacon bits
1 bunch green onions -- chopped
1 (8oz) pkg shredded cheddar cheese

Was and dry potatoes; pierce with a fork. Put in a white plastic
grocery bag ( the kind from the check-out, not from the produce
section); tie a double knot. Microwave on high 10 min. Bag will puff up.

Meanwhile, melt margarine in a large soup pot. Add flour; whisk to
combine. Add milk slowly, whisking until lightly thickened. Remove
bag of potatoes from oven. Carefully cut open bag. It will be very hot.
After potatoes are cool enough to handle, chop potatoes, including
skins, and sprinkle with salt and pepper. Add to soup. Stir well and
add sour cream, bacon, green onions and cheese. Reserve some
bacon, green onions and cheese for garnish.

NOTES : Note: When testing the recipe, the potatoes were not done
after 10 min. and were returned to the microwave 2 more min. Cooking
time will vary depending on the size of the potatoes and the power of
the microwave. If preferred, microwave potatoes in an oven cooking
bag; secure bag with the enclosed nylon tie, leaving an opening the
diameter of a quarter at the end.

BB's Swiss Steak

Round steak (aprox 2lbs)**
5 (8 oz) cans tomato sauce
1 large onion (sliced into fairly thin rings)
flour
seasoning salt**
pepper
1/4 cup water

Preheat oven to 350 F.
Cut the round steak into small single size serving pieces (You usually
can get about 6 pieces out of one steak...the pieces should be a little
bit bigger than a deck of cards) Season well with seasoning salt and
pepper.
Mix about 1/2 cup flour with about 1 teaspoon seasoning salt and
about 1/4-1/2 teaspoon pepper. Mix it so that the flour and seasonings
are well combined. (I usually do this on top of a large piece of waxed
paper but you can use a flat dish of some sort)
Coat each piece of steak real well in the flour mixture.
Spray a large casserole dish,(use one that has a cover), with
non-stick spray then add 1/4 cup water into the bottom of the dish.
Put one layer of meat, cover with half of the onion slices,2 cans of the
tomato sauce, and repeat (meat, cover with onion, 3 cans of tomato
sauce)When your putting the onions on...sorta push in the middle of
the slice so it separates the rings making lots of rings and spread
them out all over. Make sure you completely cover with the tomato
sauce. You can use more sauce if needed to cover.
Cover and bake 1 hour.

That's it!! Make a big pot of mashed potatoes (it makes a delicious
gravy right in the pan for your taters!)...your favorite vegi...salad if you
like..and rolls...or have some nice pieces of white bread on hand to
sop up the gravy...

Sweet Potato and Walnut Pie:

1 1/2 c. cooked, mashed sweet potatoes
3 Tbsp. butter
2 eggs, beaten
1/4 tsp. salt
1 c. sugar
1 tsp. lemon flavoring
1 c. milk
1/2 c. chopped walnuts
1 9-in unbaked pie shell

Mix all ingredients well. Pour into pie shell and bake 350 degrees for
35 minutes or until firm and tests done. __________________________

English Pea Casserole:

1 med. can english peas
1/4 stick margarine
1 can cream of mushroom soup
1 c. grated mild cheddar cheese
1 jar (2oz.) chopped pimento (we don't use pimentos, but other people
like them)
2 hard cooked eggs, chopped
Cracker or bread crumbs for topping

Cook peas with margarine for about 10 minutes. Drain and mix with
mushroom soup, cheese, pimento, and eggs. Pour into a 1 1/2 quart
slightly greased casserole dish. Top with cracker or bread crumbs.
Bake at 350 degrees for 30 minutes, or til crumbs are slightly
browned, and cheese is bubbly.

Baked Parmesan Cod

1 pound cod or other lean fish fillets
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup sour cream
2 tablespoons grated Parmesan cheese
1/2 teaspoon chopped fresh or 1/8 tsp dried tarragon
1/4 teaspoon paprika
2 green onion -- sliced

Heat oven to 350 degrees. Arrange fish fillets in ungreased rectangular
baking dish, 13x9x2". Sprinkle with salt and pepper. Mix sour cream,
cheese, tarragon and paprika; spread over fish. Bake uncovered about
35 min. or until fish flakes with a fork. Sprinkle with onion.

Melinda's Goulash

2 lbs ground beef
1 med. onion, chopped
1 clove garlic, crushed
1 pkg spaghetti seasoning mix
1 46 oz can of tomato juice
3 cups uncooked elbow macaroni
1 8 0z pkg cheddar cheese

Brown beef, onion, and garlic. Drain off any grease. Add sp.
seasoning, tomato juice, and macaroni. Place lid on pan; simmer 30
to 45 minutes on low until macaroni is tender.
Try not to lift the lid to check on noodles. When noodles have cooked
and absorbed juice, turn off pan and place cheese on top. Place lid on
top until cheese is melted. Mix all through goulash before serving.
Serves 8 to 10. Great for unexpected company

JUMBO STUFFED PASTA SHELLS

12 ounces Ricotta cheese
1 package spinach -- chopped and drained
1/2 teaspoon garlic powder
1 large egg -- beaten
1/4 cup Parmesan or Romano cheese
salt and pepper -- to taste
10 jumbo pasta shells -- cooked

2 cups spaghetti sauce
1/4 cup Parmesan or Romano cheese

Boil jumbo pasta shells. ( add 2-3 extras in case a few break)
Mix first six ingredients in a bowl.
Drain shells and rinse with cool water.
Stuff each shell with ricotta mixture place in greased casserole.
Top with spaghetti sauce( I use Grisanti's any type is fine) and cheese
bake for 30-45 minutes at 350.

Dawn.NY (11:16:31) : Ham and Potato Skillet.

1 pound small potatoes
1/2 pound fresh green beans cut into 1-inch pieces
1 cup water
1 8 ounce carton sour cream
2 tablespoons all-purpose flour
2 teaspoons Dijon mustard
1/4 teaspoon dill weed
1/8 teaspoon pepper
1-1/2 cups fully cooked ham, cubed

Slice potatoes; halve any large slices. In a large skillet cook potatoes
and green beans, in water, covered, about 15 minutes or until potatoes
and beans are tender. Drain well.

Meanwhile in a small saucepan stir together sour cream, flour,
mustard, dill weed, and pepper. Cook and stir until thickened and
bubbly. Pour over vegetables in skillet. Stir in ham. Heat through.
Makes 4 servings._____________________

CHICKEN FRIED STEAK AND MILK GRAVY

4 4-5 oz cube steaks
3 eggs, beaten
1 cup flour
2 tsp coarse black pepper
1-2 cups lard or vegetable oil
1 1/2 cups milk
salt to taste

Dip steaks in eggs. Mix flour with 1 tsp of the pepper, then dredge the
steak thoroughly in mixture.

Return steak to eggs then to flour again. Reserve leftover flour. Heat
lard or oil in a heavy skillet until very hot but not smoking (360-375
degrees). Use enough fat to have about 1/2 inch in skillet. Put steaks
into hot fat and cook 6-8 minutes, until golden brown on bottom. Turn
and cook other side 3-4 minutes. Remove steaks from fat with slotted
spoon and drain on paper towels.

To make gravy, pour off all but 2 Tbsp of fat in skillet. Return to heat
and sprinkle 2 Tbsp of leftover flour over hot fat, stirring constantly for a
full minute, scraping up browned bits of crust from bottom of skillet.
Add milk, a little at a time. Continue cooking and stirring until gravy is
thick. Add pepper and salt to taste (gravy should be quite peppery).

Serve steaks smothered in gravy, with mashed potatoes and/or
biscuits, black-eyed peas or greens.

Tortilla Roll-ups

1 package ( 8 oz.) cream cheese, softened
1/3 cup chunky salsa
¼ cup chopped green onion
½ tsp garlic salt
½ tsp chili powder
12 ( 6-inch) flour tortillas
guacamole

Beat cream cheese until smooth. Add salsa, onion,
garlic salt and chili powder. Mix well. Spread a
heaping tablespoon of the cream cheese mixture on
each tortilla. Rollup each tortilla fairly tightly, jellyroll
fashion, and place seam side down on a baking
sheet. Chill, covered, at least 2 hours. Slice each roll
into 4 pieces. Top each with a small amount of
guacamole. Makes about 4 dozen.

Hearty Breakfast Casserole
Yield: 4 -5 servings

1 lb. russet variety potatoes
salt & pepper to taste
8 oz bulk sausage, cooked & crumbled (or 6 oz finely diced lean ham,
or 6 oz turkey bacon, cooked & crumbled)
1/3 cup julienne sliced roasted red pepper
3 eggs
1 cup milk (low fat OK)
3 tbsp chopped chives or green onion tops (or 3/4 tsp dried thyme or
oregano leaves)
optional: salsa and low fat yogurt

Heat oven to 375 . Butter an 8 - 9 " square baking dish (for each 5
servings) Peel the potatoes & slice very thin. arrange 1/2 in the baking
dish. Sprinkle with salt & pepper. Cover with 1/2 the sausage or ham..
Arrange the remaining potatoes on top; sprinkle with salt & pepper.
Top with remaining sausage & red peppers. Beat eggs, milk & chives
until blended. Pour over potatoes. Cover baking dish(es) with tin foil
and bake for 35 - 45 minutes or until potatoes are tender. Uncover &
bake 5 -10 minutes more. Serve with salsa of choice & sour cream, if
desired.

BRUNCH CASSEROLE
8 slices bread, cubed
12 eggs
2 tsp. salt
2 c. grated cheese
8 cooked and diced potatoes; optional
4 c. milk
2 lb. bacon, sausage, ham, or chipped
beef

Spray a 9 x 13 inch pan with cooking oil. Place
cubed bread on bottom. Mix eggs, salt, and milk;
place bacon or other meat, which has been fried
and drained, on top of bread. Pour mixture over
meat. Sprinkle with cheese. Cover and refrigerate
overnight. Next morning, put in oven at 350 degrees
for 35-40 minutes. If using potatoes, place over
meat. Makes enough for 12.
