I have been using this spinach dip since 1981, it has an equal mix of mayo & sour cream, giving it a more neutral taste, which lets the soup & spinach play a larger role in the taste. It's very easy, and the recipe is requested whenever I make it.
Make at least one day in advance. This recipe makes 1 quart
Fabulous Vegetable (Spinach) Dip
1-10 oz box frozen chopped spinach, defrosted & squeezed dry 1-8 oz can water chestnuts, drained & chopped 1-1 5/8 pkg dried vegetable soup mix (I use Knorr's- I think it is the best one out for this, but feel free to substitute) 2 Cups sour cream 2 C mayonnaise
Combine all ingredients. Refrigerate. Serve w/tortilla chips & carrot sticks.
