Could you use gelatin (unflavored or flavored) and make some type of salad? Our family isn't a big gelatin fan but I do remember reading of Sangria type gelatin dishes.

If you took the fruit out - could you freeze it? Then you might have sort of a 'slush' ...and you could use it another time.

Haven't tried these ...just 'thinking' ideas.
