I just happened to try drying strawberries a couple of weeks ago when they were on sale here for 99 cents a quart. I know you can dry them in dehydrators, but I thought I'd try a science experiment in the oven because I dry tomatoes successfully every year.

I just cut up strawberries and spread them on a cookie sheet, popped it in the oven at the lowest temperature and let them dry for about 8 hours or so. Since they weren't bone-dry, I put them in a Ziplock bag and put them in the freezer.

I will use them in muffins, for sure, maybe cupcakes or cakes. Good luck.
