Have you thought of serving appetizers of minature diplomas. To make you cut the crusts off slices of bread. Flatten the bread by rolling it with a rolling pin. Thin spread some filling such as tuna salad, cream cheese spread, deviled ham, or anything else you may feel is appropriate. Roll the flatten bread slice up and then tie a thin long strip of carrot or green onion around the roll like a ribbon. These "diplomas" can be arranged on a serving platter. I have served them at graduation parties and they were a hit.

I was wondering about making dessert type diplomas like Nadia said?? you could use a phyllo dough, maybe 3 layers and sprinkle each layer with a mix of cinnamon and ground nuts after spreading with melted butter. Then you could do like she said and make into little diplomas maybe just pinch cneter and put a little frosting on for bow tie after they are baked... just a thought.
