Breakfast Grits Casserole
6 cups boiling water 1 1/2 cups grits 2 teaspoons salt 1/4 cup margarine 2 cups sharp cheddar cheese, grated 3 eggs, beaten
1. In a saucepan, prepare the grits according to the package directions, using 6 cups water. 2. In an ovenproof dish, combine all of the ingredients, mixing well. 3. Bake at 250 degrees for 1 hour.
Brunch Egg Casserole
7 slices white bread, crust removed 1 pound ground sausage 4 cups shredded cheddar cheese 6 eggs 1 teaspoon salt 1 teaspoon dry mustard 2 cups half and half
1. Lightly butter each slice of bread. 2. Cut seventh slice of bread in half. 3. Place bread in a 9 x 13-inch buttered glass baking dish. 4. Brown sausage. Drain and pat with paper towels. Sprinkle sausage over bread. 5. Sprinkle cheese over sausage. 6. Beat eggs. Add salt, dry mustard and half and half. Beat again. 7. Pour egg mixture over bread, sausage and cheese. 8. Cover with foil and refrigerate overnight. At this point, it may be frozen until ready to use. Remove from freezer and thaw overnight in refrigerator. 9. Remove foil. Bake at 350 degrees for 45 minutes or until casserole is bubbly and lightly browned on top. This dish reheats easily.
Note: This casserole is best when it stands 30 minutes after baking. Serves 16. Bonnie's Quiche
1 medium onion 1 medium bell pepper 8 ounces cheddar cheese 1 egg 3 tablespoons flour 1 pound medium sausage or hamburger 1 small can condensed milk 2 ritz pie shells
1. Preheat oven to 350 degrees. 2. Saute onion and pepper in saucepan. 3. Brown meat; drain. 4. Add onion, pepper and cheese until cheese is slightly melted. Stir in flour. Place ingredients in pie shells. Pour egg and milk mixture over top and pierce it with fork. 5. Bake 30 to 40 minutes until brown.
Grandmother's Oatmeal Muffins
1 cup regular oats, uncooked 1 cup buttermilk 1/2 cup firmly packed brown sugar 1/2 cup vegetable oil 1 beaten egg 1 cup all-purpose flour 1 teaspoon baking powder 1/2 teaspoon salt 1/2 teaspoon soda
1. Combine oats and buttermilk. Let stand for 1 hour. 2. Add sugar, oil, and egg to oat mixture., Mix well. 3. Combine flour, baking powder, salt and soda. Add oat mixture to dry ingredients, stirring until moistened. 4. Spoon into greased muffin pans, filling 2/3 full. 5. Bake at 400 degrees for 20-25 minutes. Yield: 12 large or 24 small muffins
Sara Lee Butter Coffee Cake 1 box yellow cake mix 1 small box of vanilla pudding 3/4 cup vegetable oil 3/4 cup water 4 eggs 1 tablespoon butter extract 1 tablespoon vanilla extract 1/2 cup sugar 2 tablespoons cinnamon 1 cup confectioners' sugar 1/2 teaspoon butter extract 1/4 teaspoon vanilla extract milk
1. Preheat oven to 350 degrees. Grease a 9x13-inch baking dish. 2. Beat cake mix, pudding, water, eggs, and oil at medium speed for 8 minutes. 3. Add butter and vanilla extracts. 4. In a separate bowl, mix sugar and cinnamon. 5. Pour half of the batter into the baking dish. Sprinkle with half of the cinnamon/sugar mixture. Spread rest of the batter on top and then sprinkle with the remaining cinnamon/sugar mixture. Swirl a knife through. 6. Bake for 30 to 35 minutes. 7. When cake is done, mix confectioners' sugar, extracts, and just enough milk to make it easy to drizzle from a spoon. Drizzle mixture over cake while still warm.
