Baked ( but Taste like fried ) Catfish

3oz. filets per person
Crisco Regular Flavor Cooking Spray
Cornmeal ( salted to taste )

Heat oven to 350. Cover a cookie sheet or any type of metal baking pan with foil and spray well with cooking spray. Set in oven to heat (about 5 to 7 mins.). While heating wash and coat filets with cornmeal. Lay on hot baking pan and bake in 350 oven for 20 to 30 mins. or till fish is flakey. It will give it that fried crispy taste that we southerners like with out all the added fat and calories of deepfrying.
