Rise and Shine Muffins:
1 cup & 2T.cake /pastry flour 3/4 cup sugar 1 tsp.soda 1 tsp.cinnamon 1/2 tsp.salt 1 cup grated carrots 1/2 cup raisins 1/4 cup walnuts-- optional- for lower fat omit 1/4cup coconut 1 diced apple 2 beaten eggs 1/2cup applesauce 1 tsp.vanilla
Set oven to 300. Set timer for 20 min. Some take 25min. You know your own ovens so time and temp. is up to you.
12 muffins = 152cals {per muffin} 3g fat--17%cals from fat
