Here are two recipes: one of the creamy variety, another that is non-dairy and slightly different (great if it's going to be sitting out on a hot day). Hope they help!
Cabbage Slaw with Buttermilk Dressing Recipe By : Cooking Light, Nov/Dec 1994, page 174 Servings : 15
4 cups thinly sliced red cabbage 4 cups thinly sliced green cabbage (napa is different) 1 cup shredded carrot 1/2 cup very thinly slivered red onion 1/4 cup chopped fresh parsley 1 teaspoon sugar 1 teaspoon celery seeds 1/2 teaspoon salt 1/4 teaspoon pepper 1/3 cup low-fat sour cream 1/3 cup nonfat buttermilk 1 tablespoon tarragon white wine vinegar 1 teaspoon Worcestershire sauce
Combine first 5 ingredients in a large bowl; toss well, and set aside.
Combine sugar and next 7 ingredients, and stir well. Pour over cabbage mixture, and toss gently. Cover and chill at least 1 hour.
Yield: 15 servings (serving size: 1/2 cup). CALORIES 17; FAT less than one gram
Chinese Slaw
4 cups shredded green cabbage 3/4 cup diagonally sliced green onions 1/2 cup shredded carrot 1/2 cup thinly sliced red bell pepper 2 tablespoons low-sodium tamari or soy sauce 1 tablespoon sesame seeds, toasted 1 tablespoon grated peeled fresh ginger 1 tablespoon mirin (sweet rice wine) 1 tablespoon rice vinegar 1 1/2 teaspoons dark sesame oil 2 teaspoons sugar
Combine all ingredients in a large bowl. Let stand at least 15 minutes.
Yield: 8 servings (serving size: 1/2 cup). CALORIES 34 (44% from fat); FAT 1.6g
