Sue: I have so many tomatoes in my garden, I couldn't possibly eat them all. What I do is cut the top out, cut the tomato into quarters or less (depends on size) and put them in the blender. I blend them on the highest speed until they are liquid. Then, I put the tomato liquid into a sauce pan and cook it down until I like the thickness. I put the sauce into jars, adding 1 Tblsp lemon juice for each pint, and process them in a hot water bath for 40 minutes. That way, I have the fresh sauce for use year round and I don't waste any part of the tomato. My daughter (8 years old) also likes to heat the sauce up and sprinkle cheese on top--she thinks it is tomato soup.
