Mike, my pickled eggs are simple!
I just hard boil a dozen eggs add canned red beets (I use a 15 oz. can) plus a cup or so... depending on your taste, of vinegar; if you get too much of a vinegar taste, you can tone it down with sugar..
After I have the eggs, red beets and vinegar all together, I let them stand (in the refrigerator) for at least a day to absorb the flavors; Enjoy!
