I've tried many recipes but the one I use and it never fails is the one from the Willismasburg Cookbook- I use only GRANNY SMITH apples and mix them with sugar, cinnamon, a dash of salt, some ground ginger and a pinch of allspice. Then slice up apples and mix with the sugar mixture. Place in unbaked crust- dot with butter and sprinkle with lemon juice.
