A person could substitute crushed almonds on top instead of the parmesan cheese.

PARMESAN CHEESE PUFF ROUNDS

MAKES 5 DOZEN
PREPARATION TIME 5 MINUTES
REFRIGERATION TIME I HOUR
COOKING TIME 2 TO 3 MINUTES

You may want to store a batch of these in thefreezer. Simply place the baking tray with the prepared rounds in the freezer. When frozen, transfer to plastic bags. When ready to use, thaw 15 minutes before broiling.

8 ounces cream cheese, softened
3 tablespoons mayonnaise
3 finely chopped green onions, including some of the tops
3 drops Tabasco sauce
2/3 cup Parmesan cheese
Thin-sliced white bread
Butter

In a food processor or blender, mix the cream cheese, mayonnaise, onions, and Tabasco. Transfer to a bowl, stir in 1/2 cup of the Parmesan cheese, and chill until ready to serve.

Cut out sixty I 1/2-inch bread rounds and butter one side only. Place on a tray and broil until browned. Turn over and lightly brown the unbuttered side and spread with the cheese mixture, forming a point in the middle. Dip in the remaining Parmesan cheese. Place on a baking sheet and broil until puffy and light brown.
