Here is a yummy recipe for Anzac Cheesecake, with the base being like the Aussie Biscuirts.
* Anzac Cheesecake
* Base: * 60 g butter, melted * 2 tsp runny honey * 1/2 cup rolled oats * 1/4 cup self raising flour * 1/4 cup sugar * 1/4 cup coconut
* Filling: * 750g cream cheese softened * 1 tsp vanilla essence * 4 eggs * 1 cup sugar * grated rind of one lemon * 2 tsp - 4 tsp lemon juice
* Combine butter and honey, add oats, flour, sugar and coconut, mix well * Press mixture into base of greased, lined 20cm springform pan. Bake in a moderate (180'c) oven about 10 minutes or until golden around edges. Remove from oven and cool.
* Beat eggs until thick and creamy. * Gradually add sugar, beating well.
* Last of all enjoy the Anzac Cheesecake, it keeps well in the fridge for a couple of days if it doesn't get eaten by then!!!
* Combine creamcheese and vanilla and add a little at a time to egg mixture, mixing until smooth befor adding the next spoonful. Stir in Lemon rind and juice and spread over crust. * Bake in a moderate (180'c) oven for 30 minutes. * Turn off oven, open door and allow cheesecake to cool in oven. * If you like once cool and ready to serve, top with slices of banana and then decorate with passionfruit.
