With a cooler available, I think you're in luck! Anything you like to eat cold will work. Are you hiking? Not sure what the energy requirement is .. or other dietary considerations. I'd think along the lines of a breakfast burrito .. maybe using lavosh instead of tortillas for an interesting change and rolling up (and "wraps" are very trendy right now). Fill with whatever you like.
A cooked recipe I'd like to find in a cooler in the morning is:
Broccoli Bread Pudding From: Vegetariana by Nava Atlas.
2 Tbsp. margarine (I'd use less) 1 large onion, chopped 1 clove garlic, chopped 4 cups finely chopped broccoli (you can vary this..I added mushrooms) 1 tsp EACH dried basil and dried dill (I'd use a bit less dill .. was ambivalent about it .. loved one bit, regretted it in the next, etc.) salt and pepper to taste 4 eggs, beaten 1/4 low-fat milk 1 cup cottage cheese 1/2 cup reduced fat sour cream 4 average slices whole-grain bread, torn into small pieces wheat germ and sesame seed for topping
Preheat oven to 350F.
Heat margarine in large skillet. Saute onion until translucent .. add garlic, broccoli and seasonings. Saute until onion is nicely browned and broccoli is tender but still bright green.
Beat eggs and milk together. Stir in cottage cheese, sour cream and bread. Stir in broccoli mixture and mix thoroughly.
Pour mixture into sprayed 2-quart baking dish and sprinkle with wheat germ then sesame seeds. Bake for 35-40 minutes or until top is nicely browned.
When I made this, I didn't have cottage cheese or sour cream. I used 1 1/2-2 cups milk, 4 eggs and 1 c. cooked brown rice plus the bread. I may have added a bit of cheddar ... not sure. You could vary this idea to suit your taste and needs. Anyway, this baked into a "casserole" that I served in wedges and really liked very much. You could bake this flat, too, and cut in squares for easier handling outdoors. This idea can be varied to suit what you like to eat early in the morning (I can eat whatever I like at any hour .. so far ;)) ... but it's energy and is not sweet. With a little juice it's a nutritious meal, I'd say. Although it be a lot of bread in a serving, you could actually use this in a "wrap," too.
