Hi,
I also enjoy cashew crunch. Here is a recipe I found, but I have not tried it yet.

Cashew Butter Crunch

1 cup sugar
1 cup butter
1 TBSP light corn syrup
1 1/2 cups salted cashew pieces

In a 2-quart saucepan combine sugar, butter, & corn syrup. Cook over low heat, stirring occasionally, until candy thermometer reaches 290 degrees or small amount of mixture dropped into ice water forms brittle strands (25-30 minutes). Remove from heat; stir in cashews. Spread to 1/4-inch thickness on waxed paper lined 15 x 10 x 1 inch jelly roll pan. Cool completely; break into pieces.

Makes 1 1/4 pounds (20 servings)

Tip: 1 1/2 cups of your favorite salted nuts can be substituted for 1 1/2 cups of salted cashews.
