I have asked this one before but I lost all the info I have....

I need instructions how to use dried beans. I am not sure which ones I have to
soak overnight, which ones not. Do I have to throw away the soaking water, then
cook them in clean water for 15 mins and then again throw away the cooking water? I will use just ordinary ways to cook them (no pressure cooker etc).

I know instructions for lentils, black-eyed peas and white beans, but any other kinda beans make my mind twist.

You can email the info to me if you feel that it is not ok to send it to the board. I would greatly appreciate any web sites or book hints too.
