Sheila, Only the greens are used when making dandelion with a hot bacon dressing. Here is a hot bacon dressing recipe i copied years ago from a Lancaster newspaper.

Berks county Hot Bacon dressing
8 slices bacon or more
1 cup sugar
2 Tbsp. cornstarch
1 tsp. salt
2 eggs beaten
2 cups water
1/2 cup vinegar

Fry bacon, drain and crumble. In top of double boiler stir together the sugar, salt and cornstarch place over water in bottom of double boiler Add beaten egg and vinegar mixing well,add water, some of the bacon fat may also be added as well. Cook over medium heat untill thickened, Serve on dendelion or lettuce. We Pa. dutch people like to put the danelion into the hot dressing and allow it to wilt and then eat it over potatos fried from raw not cooked potatoes, or some eat it over boiled potatoes. This is an early spring dish. and the dandelion is not as bitter before it blooms as it is latter on. I hope this will be helpful, This recipe is a fairly sweet recipe but some people like it more sour. We especially like this recipe. Enjoy
